Cooking Tips: 1. Sugar: Use fine granulated sugar for the katli. You can adjust the sweetness to your preference. 2. Sugar Syrup: Make a sugar syrup by dissolving sugar in a little water over low heat. Stir until it reaches a three-string consistency. 3. Mixing Almond Flour : Add the almond flour to the sugar syrup and mix well. Continue to cook while stirring until the mixture thickens and leaves the sides of the pan. 4. Ghee: Add a small amount of ghee to the mixture. This enhances the flavor and gives a nice sheen to the modak. 5. Modak Moulds: Invest in modak moulds of different sizes and shapes to make the modaks look attractive. 6. Shaping the Modak: Take a small portion of the almond katli mixture and place it inside a greased modak mould. Press it gently to take the shape of the mould. Carefully demould the modak by tapping it on a plate. 7. Ingredients

  • Almond flour 1 ¾ cups
  • Sugar 1 cu
  • Milk 2 tsp
  • Liquid glucose 1 tbsps
  • Ghee for greasing ¾ tbsps
  • Green cardamom powder ¼ tsp

Methods

  • Add 1 cup water in a deep nonstick pan. Add sugar and mix well.
  • Add milk and stir well.
  • Collect the scum that rises on the surface and discard it.
  • Wipe the sides of the pan with a moist muslin cloth to avoid crystallization.
  • Cook till sugar reaches 3 string consistency. Wet your fingers and add liquid glucose to sugar and mix well.
  • Add almond flour and mix well.
  • Add ghee and mix well.
  • Transfer the mixture in a parat and mash well with the help of a wooden masher and spread it evenly. Allow to cool down.
  • Grease your palms with ghee, add green cardamom powder to the mixture and mix well.
  • Stuff small portions of the mixture in modak mould and press it gently. Level the surface with the help of a butter knife. Set aside for 10 minutes.
  • Open the mould and remove the prepare modaks carefully.
  • Transfer the modaks to a serving plate, garnish it with silver varq and chopped nuts and serve.
