Ingredients

  • Pistachio powder 2 cups
  • ghee 1½ tablespoons + for greasing
  • Sugar ¾ cup
  • Water
  • Milk ½ tablespoon
  • Liquid glucose 2 tablespoons
  • Silver varq for garnishing

Methods

  • Heat a non stick pan and add ¾ cup sugar in it.
  • Next add ¼ cup water and keep stirring till the sugar dissolves.
  • Once the sugar dissolves, add ½ tablespoon milk
  • Stir it well and discard the scum that rises to the surface.
  • Cook till the syrup thickens slightly.
  • Add liquid glucose and mix till well combined.
  • Add ghee and mix well.
  • Add pistachio powder, mix well till the mixture comes together to form a lump.
  • Transfer the mixture into a bowl and let it cool slightly. Apply ghee on your palms and knead the mixture slightly.
  • Spread this mixture on the barfi tray and spread evenly.
  • Apply some ghee on a rolling pin and roll on the surface to make it even.
  • Garnish with silver varq and let it set at room temperature.
  • Cut into diamonds, or your desired shape.
  • Arrange them on a serving platter and serve.
