Ingredients

  • Large potato, boiled and peeled 1
  • Raw bananas, halved without peeling 4
  • Salt to taste
  • Peanuts, roasted and crushed 2 tsps
  • Cumin seeds 1 tsp
  • Black peppercorns, crushed ½ tsp
  • Fresh coriander leaves, chopped 1 tbsp
  • Brown bread slices, soaked and squeezed gently between hands as required
  • Sunflower oil as required

Methods

  • Heat sufficient water in a deep non-stick pan, add salt and raw bananas and cook till soft. Drain, cool and peel.
  • Take potato, peanuts, cumin seeds, black peppercorns, salt and coriander leaves in a bowl and mash.
  • Add boiled bananas and mash with the potato mixture.
  • Divide into equal portions and shape them into cutlets. Wrap each cutlet in a bread slice.
  • Heat oil in a non-stick pan, place the cutlets in it and cook, turning sides, till both sides are evenly golden and crisp. Drain on absorbent paper.
  • Arrange on a serving platter and serve hot.
