This is the way the Brazilians make muffins – very flavourful

Ingredients

  • Refined flour (maida) 1½ cups
  • Sugar ¼ cup
  • Brown sugar ¼ cup
  • Baking powder 1½ tsp
  • Baking soda ½ tsp
  • Cinnamon (dalchini) powder ½ tsp
  • Ginger, finely chopped ¼ tsp
  • Mace (javitri) ¼ tsp
  • Almonds and walnuts, finely chopped ¾ cup
  • Salt ¼ tsp
  • Buttermilk 1 cup
  • Eggs 2
  • Melted butter 2 tbsps

Methods

  • Preheat oven to 200º C.
  • Take refined flour, sugar, brown sugar, baking powder, soda, cinnamon powder, ginger, mace, almonds, walnuts and salt in a bowl and mix well.
  • Take buttermilk, eggs and butter in another bowl and whisk well.
  • Make a well in the middle of the dry mixture and pour the wet mixture into it, a little at a time, and whisk to make a thick batter.
  • Grease steel bowls with butter and line them with butter paper. Arrange the bowls on a baking tray. Fill 2 tbsps batter in each bowl.
  • Keep the baking tray in the preheated oven and bake for 20 minutes. To check when it is done, insert a toothpick which should come out clean.
  • Take the tray out of the oven and let the muffins cool a little.
  • Demould, arrange them in a serving platter and serve.
