Lightly roast the
cashewnuts in a non-stick pan on medium heat. Cool completely and put them in a mixer jar and grind them to a fine powder.
Pause during grinding
and make sure that you grind the cashewnuts to a fine powder and not a paste.
Grease a barfi tray
with a little ghee.
Transfer the powder
into the same non-stick pan and roast on low heat for 3-4 minutes.
Add honey and mix
well till you get a smooth mixture without any lumps. Continue stirring the mixture or else it will stick to the pan.
When the mixture
thickens and starts leaving the sides of the pan take a small portion and roll it into a ball. If you can roll a ball without sticking, you have the right consistency.
Transfer the mixture
into the greased tray and spread evenly. Set aside to cool completely.
Cut into square or
diamond shaped katlis and serve.
