Ingredients

  • Over ripe medium sized bananas, peeled and mashed 4
  • Fresh coconut, scraped 1 cup + to sprinkle
  • Butter to grease
  • Refined flour 2 cups + to dust
  • Baking powder 1 tsp
  • Baking soda 1 tsp
  • Maple syrup 2 tbsps
  • Oil 2 tbsps

Methods

  • Preheat the oven to 180ยบ C. Grease 2 rectangular aluminium loaf tins with some butter and dust some dry flour.
  • Take refined flour in a mixing bowl, add coconut, baking powder and baking soda and mix well with a spoon.
  • Add bananas, maple syrup and oil and mix with your hand to make a slightly stiff dough.
  • Put the dough equally in the prepared loaf tins and tap them lightly on the work top.
  • Keep the tins on a baking tray, place the tray in the preheated oven and bake for 20-25 minutes.
  • Bring the tin out of the oven and let it cool for about 10 minutes before demoulding the loaves.
  • Slice and arrange on a serving platter and serve with cups of hot tea.
