Ingredients

  • Large brinjal 1
  • Oil 1 tbsp
  • Garlic, chopped 1 tsp
  • Mustard seeds 1 tsp
  • Medium onion, finely chopped 1
  • Medium tomato, finely chopped 1
  • Coriander powder ½ tsp
  • Turmeric powder ½ tsp
  • Green chilli, finely chopped 1
  • Salt to taste
  • Fresh coriander leaves, finely chopped 1 tsp
  • Red chilli powder ½ tsp
  • Lemon juice 1½ tsps

Methods

  • Roast brinjal on direct flame till its skin chars and the brinjal is cooked. Cool, peel, mash and set aside.
  • Heat oil in a non-stick pan, add garlic and saute till golden.
  • Add mustard seeds and onion and cook the seeds splutter and onion softens.
  • Add tomato, coriander powder, turmeric powder and green chilli and mix well. Add salt and cook till tomato becomes pulpy.
  • Add brinjal, coriander leaves and red chilli powder and mix well. Cook for 2-3 minutes
  • Add lemon juice and turn off the heat. Mix well and transfer into a serving bowl. Serve hot.
