Ingredients

  • Oatmeal 1 cup
  • Butter for greasing
  • Eggs 8
  • Sugar 8 tbsps
  • Vanilla essence 4 tsps
  • Baking powder 1 tsp
  • Mixed nuts, chopped 1 cup
  • Dried blueberries 4 tbsps
  • Small apples 2
  • Keya Sri Lankan Cinnamon Powder 1 tsp
  • Cream cheese for topping

Methods

  • Preheat oven to 180º C.
  • To make each portion, grease an ovenproof baking dish with some butter.
  • Break 2 eggs in a bowl and beat well with an electric beater. Add 2 tbsps sugar and beat again.
  • Add 1 tsp vanilla essence and beat well. Add ¼ cup oatmeal and fold in well.
  • Add ¼ tsp baking powder and mix. Add ¼ cup mixed nuts and mix well. Add 1 tbsp dried blueberries and mix well.
  • Roughly chop ½ apple and add. Mix well. Add ¼ tsp Keya Sri Lankan Cinnamon Powder and mix well.
  • Transfer the oatmeal mixture into the greased baking dish, keep the dish in the preheated oven and bake for 7-8 minutes.
  • Serve hot topped with a cream cheese shaped into mice.
