Ingredients

  • Ripe bananas, peeled and chopped ½ cup
  • Coffee decoction 1 tbsp
  • Butter 1 cup + to grease
  • Castor sugar 1 cup
  • Eggs 2 to 3
  • Vanilla essence 1 tsp
  • Baking powder 1 tsp

Methods

  • Preheat oven to 180º C. Grease muffin moulds with a little butter.
  • Take butter and castor sugar in a mixing bowl and beat them together with an electric beater.
  • Add eggs, vanilla essence and coffee decoction and beat well till mixture is fluffy.
  • Add baking powder and bananas and prepare a thick batter.
  • Pour the batter into the greased muffin moulds taking care not to fill them upto the brim.
  • Keep the moulds in the preheated oven and bake for 20-25 minutes.
  • Remove from oven and cool. Demould and arrange them on a serving platter and serve.
