Ingredients

  • Medium carrots, peeled and chopped 2
  • Medium potatoes, sliced 4
  • Medium green capsicums, chopped 2
  • Medium onions, chopped 2
  • Corn kernels ½ cup
  • Medium tomato, chopped 1
  • Fresh thyme, chopped 1½ tsps
  • Spring onions, finely chopped 3 tbsps
  • Salt to taste

Methods

  • Boil 1½ cups of water in a deep non-stick pan, add carrot, potato, green capsicum, onion, corn kernels, thyme and salt, mix well and cook for 7-8 minutes or till all the vegetables are tender.
  • Add tomatoes and cook for 2 minutes more or till the mixture thickens.
  • Remove the pan from heat and add spring onions and mix well.
  • Transfer into a serving bowl and serve hot.
