A cup of this iced coffee is sure to soothe you on a hot summer day

Ingredients

  • Instant coffee powder 4 tsps
  • Sugar 2 tbsps
  • Castor sugar ⅓ cup
  • Lemon 1
  • Fresh mint leaves a few
  • Lemon 4 slices
  • Crushed ice as required

Methods

  • Boil 4 cups of water in a deep non-stick pan, add coffee powder and mix well. Take the pan off the heat and set aside and cool down to room temperature.
  • Pour the coffee decoction into a bowl, add sugar and mix well.
  • Spread cup castor sugar on a plate. Halve the lemon and rub one half on the edges of 4 tall glasses. Place the glasses upside down in castor sugar till their rims are coated well.
  • Place the glasses on the worktop, tear some mint leaves and put into them.
  • Place a lemon slice in each glass and add some crushed ice.
  • Pour coffee decoction into the glasses and serve.
