Mixed vegetables cooked in South Indian style is full of flavour and taste

Ingredients

  • Broad beans, stringed and cut into ½ inch pieces 4
  • Drumsticks, cut into 1 inch pieces 3
  • Medium carrot, peeled and diced 1
  • Small potatoes, boiled, peeled and diced 4
  • Medium raw bananas, boiled, peeled and diced 2
  • Refined oil 1 tbsp
  • Garlic, minced 1 tsp
  • Thin strips of ginger 1 tsp
  • Green chillies, slit 1 to 2
  • Cumin seeds 1 tsp
  • Fresh coconut, scraped 1 tbsp
  • Turmeric powder ¾ tsp
  • Salt to taste
  • Medium onion, sliced ½
  • Medium tomato, sliced ½
  • Low fat yogurt 5 tbsps
  • Fresh coriander leaves, finely chopped 1½ tsps + to garnish

Methods

  • Heat oil in a non-stick pan, add garlic, ½ tsp ginger strips, green chillies, cumin seeds, coconut and turmeric powder and saute till fragrant.
  • Add beans, drumsticks, carrot and salt and mix well. Add onion and tomato and saute for 2-3 minutes.
  • Add potatoes and bananas and toss well. Add ½ cup water and yogurt and mix well. Cook till vegetables are done.
  • Add coriander leaves and mix.
  • Transfer into a serving bowl, garnish with coriander leaves and remaining ginger strips. Serve hot.
