Sieve together refined
flour and baking powder into a bowl.
Take butter and sugar
in another bowl and beat with an electric beater till light fluffy.
Gradually add eggs, 2
at a time, and continue beating till the mixture is light. Add vanilla essence and mix.
Add the refined flour
mixture and fold in well. Add milk and mix well.
Add ½ cup apple
pieces and cinnamon powder and mix well.
Pour the batter into the
muffin moulds. Top with the remaining apple pieces.
Keep the muffin
moulds in the preheated oven and bake for 20-25 minutes.
Take the moulds out
of the oven and cool down to room temperature. Demould the muffins and arrange them on a serving platter. Dust cinnamon powder and icing sugar over them and serve.
