Heat oil in a non-stick
pan, add carrot, onion, baby corns, capsicum, salt, turmeric powder and black pepper powder, mix well and saute for 3-4 minutes.
Add tomatoes and salt
and saute for 2-3 minutes.
Add tofu and broccoli,
mix and cook for 2-3 minutes.
Now add ¼ cup
water, mix and cook on medium heat for 2-3 minutes or till the moisture is absorbed.
Transfer into a serving
bowl and serve immediately.
