Idlis sandwiched with a flavourful vegetable mixture and steamed

Ingredients

  • Ready idli batter 500 gms
  • Salt to taste
  • Carrot, grated 1 cup
  • Green capsicum, finely chopped 1 cup
  • Ginger-garlic paste ½ tsp
  • Green chillies, finely chopped ½ tsp
  • Fresh coriander leaves, chopped 1 tbsp

Methods

  • Take idli batter in a large bowl, add salt and mix well.
  • Take carrot, green capsicum, ginger-garlic paste, green chillies, coriander leaves and salt in a bowl and mix well.
  • Heat sufficient water in a steamer. Lightly grease the idli moulds. Pour some batter into each mould taking care not to fill them upto the top.
  • Sprinkle some of the vegetable mixture and fill them up with more idli batter.
  • Keep the moulds in the steamer, put the lid on and steam for 15-20 minutes.
  • Take them out and cool slightly before demoulding them.
  • Arrange them on serving plates and serve hot with a spicy dip or chutney of your choice.
