Apply butter on all the
bread slices. Now put palak paneer equally on 4 slices, sprinkle cheese and top with remaining 4 bread slice.
Break eggs into a
bowl and whisk well. Add all the vegetables, salt and pepper powder and mix well.
For each omelette heat
1 tsp oil in a non-stick pan, pour in ΒΌ egg mixture and let it spread around the pan. Make 3 more omelettes similarly.
Place 1 omelette over
each sandwich and top it with some more cheese. Top each sandwich with a 3rd slice.
Heat a non-stick grill
pan. Grease it lightly with oil, keep the sandwiches in it, two at a time, and grill them, turning sides till both sides are even grilled and grill marks appear on them.
